Ingredients
Meat
- 2 kggoat ribs and leg on the bone, cut into large pieces, or beef short ribs
- 2 tbspcoarse salt
- 1 tbspblack pepper
- juice of 2 lemons
- 3garlic cloves, crushed, optional
- 2 tbspoil, for brushing
Kachumbari
- 4tomatoes, sliced
- 2red onions, sliced paper-thin and soaked 5 min in cold water
- 1green chilli, sliced
- 1cucumber, diced, optional
- juice of 2 limes
- a handful of coriander
- 1 tspsalt
Pilipili and sides
- 6bird’s eye chillies, pounded with 1 tsp salt and 1 tbsp lemon juice
- 1quantity ugali, or fried cassava chips
- cold beer or soda
Fire
- 2 kglump charcoal in a jiko or a kettle grill
Directions
- Light the charcoal and let it burn down until it is covered with grey ash and there are no flames, 30 to 40 minutes. Nyama choma is grilled over heat, never over fire.
- Rub the meat with salt, pepper, lemon juice and garlic. Tanzanian butchers season lightly and late, because the point is the taste of the goat and the smoke, not a marinade.
- Set the pieces on the grate high above the coals, about 20 to 25 cm, and let them cook slowly.
- Turn the meat every 8 to 10 minutes for 60 to 90 minutes, brushing with a little oil and lemon juice each time. If it flares, move the piece rather than dousing the fire.
- Judge it by feel and colour: the fat should be rendered and crackling, the outside deep brown and dry, and the juices running clear when you push a skewer into the thickest part.
- Rest the meat on a board for 10 minutes; goat is lean and tightens if you cut it straight off the fire.
- Toss the kachumbari together only now, so it stays crisp and does not weep.
- Pound the chillies with salt and lemon to a rough pilipili paste in a mortar.
- Chop the meat on the board into bite-sized pieces with a heavy knife, bones and all, the way it is done in front of you at a nyama choma bar.
- Serve it in a pile on the board with kachumbari heaped alongside, pilipili in a saucer, ugali or cassava to eat with it, and eat with your hands.
Technique
- Nyama choma is a social event as much as a dish. You choose the cut at the counter, it is weighed, grilled and brought to your table on a wooden board, and it is eaten slowly with beer over an afternoon.
- Goat, mbuzi, is the preferred meat, and Tanzanians will name the animal’s age and origin. Beef ribs are the common alternative and pork is grilled the same way in some regions.
- Slow and high is the technique. Directly over hot coals the outside chars while the collagen inside stays tough; the long turn over medium heat is what makes it tender.
Substitutions
- No charcoal: roast the meat at 150°C (300°F) for 2 hours, then finish it under a fierce grill for 10 minutes, which gives colour but not the smoke.
- No goat: lamb shoulder on the bone behaves almost identically, and beef short ribs need slightly longer.
- Kachumbari without cucumber is the standard in most bars; add it only if you want it milder.
