Ingredients

Wings

  • 1.5 kgchicken wings, split into flats and drumettes
  • 1 tspsalt
  • 1 tspbaking powder
  • oil, for deep frying

Sauce

  • 120 mlcayenne pepper hot sauce
  • 100 gunsalted butter
  • 1 tbspwhite vinegar
  • ½ tspcayenne pepper
  • ¼ tspgarlic powder

To serve

  • blue cheese dip
  • celery sticks

Directions

  1. Split the wings into flats and drumettes and keep the tips for stock.
  2. Pat the wings absolutely dry, toss them with the salt and baking powder, and leave them uncovered on a rack in the refrigerator for at least 4 hours and preferably overnight.
  3. Use baking powder, not bicarbonate of soda. The baking powder raises the pH of the skin so it browns and crisps far harder, whereas bicarbonate on its own will make them taste of soap.
  4. Heat the oil to 175°C (350°F) and fry the wings in batches for 8 to 10 minutes, until cooked through and pale gold, then lift them out and rest them for 10 minutes.
  5. Raise the oil to 200°C (400°F) and fry them a second time for 2 to 3 minutes, until deep brown and hard-crisp. This double fry is what lets a wing shatter rather than sag once it has been sauced.
  6. Melt the butter gently and whisk it into the hot sauce with the vinegar, cayenne and garlic powder. Do not let it boil: a boiled butter sauce splits and slides straight off the wings.
  7. Tip the wings into a large bowl, pour the sauce over and toss for a good 20 seconds so every surface is coated.
  8. Serve immediately with blue cheese dip and celery sticks, which is exactly how they came out of the Anchor Bar and not a modern garnish.

Technique

  • There is no breading and no batter on a Buffalo wing. The crispness comes from drying the skin and frying twice.
  • Teressa Bellissimo made the first ones at the Anchor Bar in Buffalo in 1964, from wings that would otherwise have gone into the stockpot.
  • Sauce them at the very last moment. Wings sitting in sauce go soft within a few minutes.

Substitutions

  • Baked on a rack at 230°C (445°F) for 45 minutes, turning halfway, which works well though it is not the same.
  • Ghee in place of butter, which holds the emulsion more reliably.

Variations

  • Mild, with a higher proportion of butter to hot sauce.
  • Honey-garlic, or a dry cajun rub with no sauce at all.
  • With ranch instead of blue cheese, which is common everywhere except Buffalo.
