  • 150 mlorange juice, freshly squeezed
  • plenty of ice

  • 1 sliceof orange

Directions

  1. Squeeze the oranges fresh, immediately before mixing.
  2. Now the part that makes it a Garibaldi rather than simply Campari and orange: the juice has to be aerated until it is fluffy.
  3. Run the fresh juice through a slow juicer, a blender for a few seconds, or a milk frother, until it is visibly foamy and paler than it started.
  4. That fluffiness is the entire drink. Bar-quality Garibaldis are made with juice whipped full of air, and flat juice from a carton gives a thin and rather dull highball.
  5. Fill a tall glass to the top with ice.
  6. Pour the Campari over the ice.
  7. Top with the aerated orange juice, which will sit as a foamy pale orange column above it.
  8. Stir once, gently, lifting from the bottom.
  9. Garnish with a slice of orange and serve immediately, before the foam falls.
