Ingredients
Batter
- 250 gplain flour
- 500 mlmilk
- 2eggs
- ½ tspsalt
- butter, for the pan
Savoury toppings
- 200 gstreaky bacon, spek
- 150 ggrated cheese
- sliced mushrooms
- sliced onion
Sweet toppings
- 2apples, thinly sliced
- cinnamon sugar
- stroop, thick sugar-beet syrup
- icing sugar
To serve
- one enormous pancake per person, on a plate that barely holds it
Directions
- Whisk the flour and salt with the eggs and a little of the milk into a thick smooth paste first. Starting thick and beating out the lumps at that stage is far easier than chasing lumps around a thin batter.
- Let the batter rest for at least thirty minutes at room temperature.
- Use the largest frying pan you own, ideally twenty-eight centimetres or more. A pannenkoek should more or less fill a dinner plate, and a small one is simply a different thing. Heat it over a medium heat and add a knob of butter.
- Fry the bacon in the pan until it starts to crisp and renders its fat. Pouring the batter over the frying bacon sets the pieces into the pancake, which is exactly how it is done in the Netherlands.
- Cook it for two or three minutes until the underside is golden and the top is set. Now flip it, which takes some care given the size.
- Use a wide spatula and, if the pan is very large, a second one to support it. Cook the second side for a minute or two. If you are using cheese, scatter it over now so it melts on the residual heat.
- Serve them one at a time as they come out of the pan, since they are meant to be eaten hot.
Technique
- The Dutch baby is an American dish and is not Dutch.
- Savoury toppings go into the pan before the batter.
- Stroop, sugar-beet syrup, is the standard sweet finish.
Substitutions
- Any streaky bacon in place of spek.
- Golden syrup in place of stroop, though the flavour differs.
Variations
- Spek en kaas, bacon and cheese, which is the classic.
- Apple and cinnamon, with icing sugar.
- Bacon with stroop, sweet and savoury together.
