Ingredients

Yoghurt

  • 1.5 litreswhole milk
  • 3 tbsplive kiselo mleko or plain yoghurt, as starter

To serve

  • bread
  • roasted peppers
  • salt, or honey

Directions

  1. Bring the milk to 90°C (194°F), stirring so it does not catch, and hold it there for five minutes. This high heat unfolds the whey proteins so they set into the curd rather than draining away — it is what makes Balkan yoghurt thick.
  2. Cool to 45°C (113°F) — warm on the wrist, not hot. Above 46°C (115°F) the culture dies.
  3. Loosen the starter with a ladle of the warm milk, then stir it back through the pot.
  4. Pour into jars or a bowl, cover, and wrap in a thick towel. Leave undisturbed somewhere warm for six to eight hours.
  5. Do not move or stir it while it sets. A jolted curd never firms up properly and weeps whey afterwards.
  6. It is ready when it holds its shape as you tilt the jar and only a little whey shows at the edge. Longer gives more sourness, not more thickness.
  7. Chill for at least four hours before eating — it thickens noticeably in the cold.
  8. Eat cold with bread and roasted peppers, or with honey.

Technique

  • The two temperatures are the whole recipe: 90°C to set up the milk, 45°C to add the culture. Everything else is waiting.
  • If it comes out thin, the milk was not taken high enough — not, as people usually assume, a problem with the starter.
  • Save three spoonfuls for the next batch; the culture runs indefinitely.

Substitutions

  • Any live yoghurt as a starter.
  • Sheep’s or buffalo milk, both traditional in Macedonia and both thicker.

Variations

  • Drained through muslin it becomes a thick strained yoghurt for spreading.
  • Thinned with water and salted it becomes a drink.

History

Set with local cultures and eaten at nearly every meal; the Balkan yoghurt tradition long predates industrial dairies.
