Ingredients

Pudding

  • 200 gshort-grain rice
  • 2 litreswhole milk
  • 200 gsugar
  • 1strip lemon or orange peel
  • 1cinnamon stick
  • a pinch of salt

To finish

  • 1 tspvanilla
  • ground cinnamon

Directions

  1. Rinse the rice once, briefly, and no more than that.
  2. Do not wash the starch away. It is what thickens the milk, and thoroughly rinsed rice gives you rice sitting in milk rather than a pudding.
  3. Put the rice, milk, citrus peel, cinnamon stick and salt into a heavy pot.
  4. Bring it slowly to a bare simmer, stirring often.
  5. A heavy pot and a low heat throughout. Milk and rice catch on a thin base within minutes and scorched milk taints the entire batch.
  6. Cook uncovered for about an hour, stirring every few minutes and scraping the bottom.
  7. Add the sugar only in the last 20 minutes.
  8. Sugar added early slows the rice from softening and it stays chalky in the middle however long you cook it.
  9. It is ready when the rice is completely soft and the milk has thickened to a loose cream.
  10. Take it off while it still looks too runny, because it thickens a great deal as it cools and an already-thick pudding sets solid.
  11. Fish out the peel and the cinnamon stick, and stir in the vanilla.
  12. Pour it into a dish or into individual glasses and cool it completely, then chill.
  13. Serve cold, dusted with ground cinnamon.
  14. It is Paraguayan household dessert, made in quantity and kept in the fridge, and the name is Guaraní for rice milk.
