Ukraine
Ukraine’s food is built around beet borscht, filled dumplings, cured salo and garlic bread rolls from Europe’s breadbasket. Look for Borscht (beet and cabbage soup with pork, sour cream, garlic pampushky), Varenyky (boiled dumplings with potato, cheese or cherries; fried onions, smetana) and Salo (cured pork fatback with garlic, rye bread, horilka). UNESCO added the culture of Ukrainian borscht to its urgent-safeguarding list in 2022; beetroot took over the soup as the crop spread. This atlas has 48 Ukraine dishes catalogued below, from everyday cooking to food kept for festivals and special occasions.
