Azerbaijan
Saffron plovs, herb soups and stuffed vegetables blending Persian, Turkic and Caucasian flavors; famous Novruz pastries. That is the short version of what Azerbaijan cooks. Look for Plov (saffron rice crowned with lamb, chestnuts and dried fruit; dozens of varieties), Dolma (grape leaves or vegetables stuffed with lamb and rice; UNESCO-listed tradition) and Pakhlava (diamond-cut nut pastry with saffron and honey, Novruz essential). Azerbaijani plov keeps the rice and its topping, called qara, separate, over a crust of dough or lavash known as gazmakh. This atlas has 37 Azerbaijan dishes catalogued below, from everyday cooking to food kept for festivals and special occasions.
