Directions

  1. Use thin bratwurst rather than thick ones, since two must fit side by side in the bread. Grill or pan fry them over a medium heat until browned all over and cooked through.
  2. Cook them slowly rather than fast, since fierce heat splits the skins and leaves the middle raw. They should take eight to ten minutes.
  3. Chop it finely either way, since large pieces fall out of the sandwich. Use a mild curry powder, not a hot one. Use a fair amount, since it should be clearly noticeable and it is the defining flavour. Now the bread, which must be sturdy.
  4. Use a short white baguette or a long crusty roll, crisp outside and soft within. The bread must be sturdy enough to hold two sausages and their juices without collapsing.
  5. Cut the roll almost through lengthways, leaving a hinge, or cut off one end and hollow it out. That keeps everything inside and makes it possible to eat walking without losing the filling.
