Ingredients
Base
- 8graham crackers, or digestive biscuits
Chocolate
- 4squares milk chocolate, thin bars rather than thick
Marshmallow
- 4large marshmallows
Equipment
- long roasting sticks or skewers
- a campfire, or a gas hob
Optional
- peanut butter
- a slice of banana
- salted caramel
Directions
- Break the graham crackers in half so each s’more has a top and a bottom. Now lay a square of chocolate on one half and have it ready before you start toasting.
- Use a thin chocolate bar rather than a thick chunk, because a thin one melts in the time available and a thick one does not.
- Hold it over glowing embers rather than flame. Flames set the outside alight and carbonise it while the middle stays cold and solid. Turn it slowly and continuously, keeping it a few inches above the heat.
- Take three to five minutes over it rather than thirty seconds. The goal is a marshmallow that is evenly golden brown outside and completely molten inside, and slow patient turning is the only way to get there.
- Press the second cracker on top and squeeze gently. Hold it together and pull the stick out through the middle.
- Squeeze it just enough to melt the chocolate and no harder, or the marshmallow squirts out of the sides.
- Wait about thirty seconds before eating so the chocolate has fully softened. It will be extremely hot in the middle, which is worth warning children about.
Technique
- Digestive biscuits are the usual substitute outside North America and work well.
- A peanut butter cup in place of plain chocolate is a common improvement.
- S’mores are made indoors in ovens and microwaves and campfire purists disapprove.
Substitutions
- Digestive or rich tea biscuits for graham crackers.
- Dark chocolate, which is less traditional and better.
Variations
- With peanut butter or a peanut butter cup.
- With a slice of banana or strawberry.
- Made indoors under a grill.
