Ingredients

Patties

  • 2beef patties, ideally Ramly brand
  • salt and pepper

Buns

  • 2soft burger buns
  • margarine, for the griddle

Egg blanket

  • 2eggs, per burger

Sauces

  • Worcestershire sauce
  • black pepper
  • chilli sauce
  • tomato ketchup
  • mayonnaise
  • Maggi seasoning

Also

  • shredded cabbage
  • sliced onion
  • sliced cheese, optional

  • a flat griddle
  • a spatula

Directions

  1. Heat a flat griddle over a medium heat and melt a generous knob of margarine. Use far more margarine than seems reasonable. Split the buns and press the cut faces into the margarine on the griddle until golden.
  2. Toast the buns in the same fat the patty cooks in, which is standard. Cook the patty on the griddle for 3 minutes a side. Press the patty down lightly with the spatula so it takes on colour.
  3. Add a slice of cheese now if you want it, and let it melt. Crack two eggs onto a clear part of the griddle and break the yolks.
  4. Spread the egg out with the spatula into a thin square, roughly twice the width of the patty. Spread it thin and square rather than letting it spread into a round, because it has to fold neatly around the patty.
  5. Let it set for about a minute, until the underside is cooked but the top is still slightly wet. Set too firm and the egg cracks when you fold it; too wet and it tears. Fold the four sides of the egg in over the patty, one at a time, making a sealed parcel.
  6. Fold it like an envelope and press the seams down onto the griddle to set them. Turn the whole parcel over and cook 30 seconds to seal the folds.
  7. Squeeze chilli sauce, ketchup and mayonnaise generously over, which is standard rather than excessive. Serve immediately, still in its paper, and eat it through the wrapper.

  • Ramly patties are frozen and sold across Malaysia and in Malaysian shops abroad.
  • Chicken patties are equally common at the carts.
  • It is deliberately messy and eating it neatly is not really possible.
