Ingredients
The base
- 800 gpalm fruit concentrate (banga), tinned, or 1.5 kg fresh palm nuts
- 1.2 litreswater
The pot
- 800 gfresh catfish, in steaks, or 600 g dried fish and 400 g beef
- 1onion, blended
- 2scotch bonnets, blended
- 2 tbspground crayfish
- 1stock cube
- 2 tspsalt
Banga spice
- 1 tbspbeletientien (banga spice mix)
- 1 tspataiko, ground
- 1 tspirugeje, ground
- 2 tbspdried and ground oburunbebe stick, or 1 whole stick
- 1 tbspdried bitterleaf or scent leaf, crumbled
To serve
- starch (usi), pounded yam or eba
Directions
- If using fresh palm nuts, boil them 30 minutes until soft, pound in a mortar to release the pulp from the fibre and stones, then wash the pulp out with warm water and strain to a thick orange liquid. Tinned concentrate skips all of this.
- Pour the palm concentrate into a pot with the water and bring to a boil. Simmer uncovered 20–25 minutes, uncovered so it reduces, until it thickens and the oil begins to rise to the surface in an orange film.
- Salt the catfish and rinse it in hot water to firm the skin, so the steaks hold together rather than disintegrating.
- Add the blended onion, scotch bonnet, crayfish and stock cube to the pot and simmer 10 minutes.
- Add the banga spices and the oburunbebe stick and simmer another 10 minutes. The stick is the signature aroma of a Delta banga and is left in the pot, not eaten.
- Lower in the fish and simmer very gently 12–15 minutes, without stirring — shake the pot instead so the catfish stays whole.
- Stir in the bitterleaf or scent leaf in the last 2 minutes. Taste and adjust salt.
- Serve hot with starch, which is the traditional Delta pairing, or with pounded yam.
Technique
- Reduce it properly. Banga soup should be thick enough to coat the back of a spoon, and watery banga is the commonest fault.
- Do not stir once the fish is in. Catfish falls apart if you do.
- The specific spices — ataiko, irugeje, oburunbebe — are what make it banga rather than any palm-nut soup. Sold ready-mixed as beletientien.
Substitutions
- Goat or beef instead of catfish, given 40 minutes longer.
- Where the Delta spices are unavailable, a mixture of ground ehuru and uda is closer than leaving them out entirely.
Variations
- Ofe akwu, the Igbo version, served with rice rather than starch.
- A version with periwinkles and dried prawns alongside the fish.
History
A rich soup made from the extracted pulp of palm nuts, cooked with meat, fish and a distinctive spice blend, documented across Nigeria, particularly associated with the Urhobo and Itsekiri peoples of the Niger Delta region, reflecting the oil palm’s deep and long-established importance across that specific region’s agriculture and cuisine. Its distinctive preparation, requiring the boiled palm nuts to be pounded and their pulp extracted separately from the hard shells before being cooked into soup, is a labor-intensive traditional technique passed down across generations within Niger Delta communities. Banga soup remains one of the most iconic traditional soups of Nigeria’s Niger Delta region specifically.
