RATE

Home-brewed mahangu millet beer, thick, sour and served in a calabash. Oshiwambo women brew it for weddings and for the homestead, and it is central to Ovambo hospitality.

Home brewing of alcohol is licensed or restricted in most of the atlas’s readership, and the sour stage depends on the culture living in pots used continuously.

What goes into it

  • mahangu — pearl millet
  • sorghum malt
  • water

How it is made

Mahangu is soaked, sprouted and dried, then ground and mixed with water and left to sour overnight with lactic bacteria. The soured mash is cooked, cooled and left to ferment a day or two more. It is served warm, thick and unstrained, and it turns undrinkable within days.

How long it takes: three to five days from grain to calabash

From a calabash at weddings and homestead gatherings, passed around.
