Ingredients
The drink
- 60 mlwhite port (Porto branco, dry or extra dry), chilled
- 120 mlIndian tonic water, very cold
- ice cubes, enough to fill the glass
Garnish
- 1 sprigfresh mint
- 1wide strip of orange zest, or a slice of lemon
Directions
- Chill the white port in the fridge beforehand. It is served cold, never at room temperature like a ruby or tawny.
- Fill a large wine glass or a tall highball right to the top with ice; a half-filled glass melts down and dilutes the drink in minutes.
- Pour the port over the ice.
- Top with tonic in one steady pour down the inside of the glass, or over the back of a bar spoon, to keep as much gas as possible.
- Give it a single gentle lift with the spoon. Do not stir it down.
- Clap the mint once between your palms to release the oils and tuck it in beside the ice, then twist the orange zest over the surface and drop it in.
- Serve immediately, before the meal. This is Portugal’s summer aperitif, poured in every café from Porto to the Algarve, and it should be about 8–9% ABV in the glass.
Technique
- Use dry or extra-dry white port. Sweet white port with sweet tonic makes a cloying drink; the quinine in the tonic is there to cut the residual sugar.
- One part port to two parts tonic is the standard build. Some Douro lodges pour 1:1.5 for more body and more port character.
- White port is made from white Douro grapes, fermented only briefly and then fortified with grape spirit to 19–20%, which stops the fermentation and leaves sugar behind. The tonic serve was pushed hard by the port houses in the 2000s to sell a summer, younger-drinker style, and it worked.
Substitutions
- No white port: a dry Sercial Madeira or a bone-dry fino sherry make comparable aperitifs, both drier and more saline.
- Tonic can be swapped for a good bitter lemon, which gives a softer, sweeter, more citrus-led drink.
