Ingredients

What goes into the still (distillery scale)

  • 10000 LJamaican cane molasses, diluted to 14–16 Brix
  • wild and house yeasts, plus dunder, the acidic spent wash from the previous distillation
  • muck pit liquor, the aged bacterial ferment used by high-ester houses
  • double retort copper pot stills
  • soft limestone-filtered water for reduction to 63 percent ABV

Rum punch, the standard serve for 4

  • 1part lime juice (60 ml)
  • 2parts sugar syrup (120 ml)
  • 3parts overproof white rum (180 ml)
  • 4parts water or coconut water (240 ml)
  • 1 tspgrated nutmeg, 4 dashes Angostura bitters
  • crushed ice

Directions

  1. Reduce with soft water to 63 percent ABV, 126 proof, and filter lightly.
  2. Stir lime, syrup and water in a jug.
  3. Add the rum last, stir, and add bitters.
  4. Chill hard over plenty of crushed ice and grate nutmeg over the top just before serving. For the neat serve, pour 25 ml into a small tumbler, no ice, with a glass of cold water alongside as a chaser.

Technique

  • 63 percent ABV is above the flammability threshold: never pour it near a naked flame, and never flame it in a glass.
  • Home distilling is illegal without a licence in most countries and badly cut spirit carries methanol. Buy the bottle; ferment nothing you intend to distil.
  • Overproof is not simply strong rum. Wray and Nephew White Overproof, the archetype, is a high-ester pot still rum, and its funk is deliberate, built by dunder and muck.
  • In Jamaica it is as much medicine and ritual as drink: rubbed on the skin for fever and used in bush baths.

Substitutions

  • No overproof: use 120 ml of a standard 40 percent white rum in the punch and cut the water to 2 parts, but accept a softer, less electric drink.
  • Coconut water in place of plain water makes the punch that is actually served on the north coast.

Variations

  • Rum and Ting, a tall glass of overproof topped with the grapefruit soda, over ice.
  • Chaser, a shot of overproof followed straight down by cold water or coconut water.
