Ingredients
Drink
- 60 mlpisco
- 150 mlcola, well chilled
To serve
- plenty of ice cubes
- a wedge of lemon, if wanted
Equipment
- a tall glass, or a plastic cup at a party
Note
- the proportions are entirely a matter of preference
Directions
- Start weaker than you think and adjust from there. Preparing the glass takes a moment.
- Fill a tall glass to the top with ice.
- Use plenty, since the drink should be very cold. A warm glass melts the ice immediately.
- Pour the pisco over the ice first. Top the glass up with the cold cola.
- Pour it slowly down the side of the glass. Pouring gently keeps the carbonation in the drink.
- Stir it once, briefly, with a long spoon. Serving it is done immediately.
- Serve it while it is cold and still fizzing.
Technique
- Chile and Peru both claim pisco and make it differently; piscola uses Chilean pisco.
- Use an everyday pisco rather than an aged one, which is wasted under cola.
- Pour the cola gently and stir once, or you flatten it.
Substitutions
- Any Chilean pisco at an everyday grade.
- Lemon soda in place of cola, which makes a different drink.
Variations
- Piscola cargada, poured stronger.
- With a squeeze of lemon, which divides opinion.
- Made with ginger ale instead of cola.
