Mash
- 20 kgmaize, cracked, or 20 kg cassava, peeled and soaked
- 5 kgmalted maize or germinated grain, ground, as the enzyme source

Directions
- Cassava roots are peeled and soaked in water for three to five days until they soften and ferment, which also removes their cyanogenic compounds; maize is simply cracked and steeped.
- The softened root or grain is mashed with water and mixed with ground malted maize, whose enzymes convert the starch into fermentable sugar over several hours in a warm pit or drum.
- The mash is left open to ferment for three to five days with wild yeasts and a starter from the previous batch. It bubbles hard, sours, and reaches perhaps 5 to 8% alcohol.
- The fermented mash is poured into an oil-drum boiler set over an open wood fire, and the lid is sealed with clay or dough so vapour can only escape through the arm.
- Vapour travels through the pipe into a length of tube coiled in a trough of running water, where it condenses and drips into a jerrycan. There is no reflux and no plate column, so the cut is crude.
- The distiller judges strength by shaking the jerrycan and reading how long the bubbles last, or by lighting a spoonful, rather than with a hydrometer.
- The result runs anywhere from 30 to 60% ABV. It is clear, sharply spirituous, and drunk unaged and undiluted in small glasses in a nganda, a neighbourhood bar.
- Better producers throw away the first runnings from each drum; many do not, which is where the danger lies.
Technique
- This is a genuine, widely documented artisanal industry across the Congo River basin, but it is unregulated and dangerous. The first fraction off any still is rich in methanol and acetone, and discarding the heads is the single most important safety step. Improvised condensers made from salvaged car radiators or lead-soldered pipe have caused heavy-metal poisoning.
- Home distilling is illegal without a licence in most countries, and this is written as a description of how lotoko is actually made, not as an instruction to build a still.
- Quality varies enormously by producer. Maize lotoko is generally considered cleaner and smoother than cassava lotoko, which carries a sour, earthy note.
