Unsalted cod air-dried on wooden racks until it is hard as board. It has been dried on Lofoten racks since the Viking age, is Norway’s oldest export, fed medieval Europe, and is still shipped to Italy and Nigeria.
It is preserved by a specific climate — near-freezing, dry, constantly moving Arctic coastal air for months — and no kitchen anywhere substitutes for that; without it, unsalted fish simply rots.
What goes into it
- Atlantic cod, split and headed
- cold dry coastal wind
How it is made
Cod caught in the late-winter spawning run are split, tied in pairs and hung over wooden racks on the Lofoten shore from February. No salt is used at all. The air sits just above freezing and moves constantly off the sea, so the fish dries through before anything can spoil in it. It hangs for two to three months and then matures indoors for months more.
How long it takes: two to three months on the racks, then months maturing
How it is eaten
Soaked for days and cooked into bacalao and Italian baccalà, or shaved dry as a snack.
