A German-style lager brewed in the Christian hill village of Taybeh. The Khoury family founded it in 1994 after the Oslo accords, making it the first Palestinian brewery, and it now runs its own Oktoberfest.
It is one brewery’s commercial lager, and brewing beer at home is licensed or restricted in much of the atlas’s readership.
What goes into it
- imported malted barley
- hops
- lager yeast
- local spring water
How it is made
Malt is mashed, the wort boiled with hops, cooled and fermented cool with lager yeast, then conditioned before bottling. The brewery follows the German purity law — malt, hops, yeast and water only. Its practical difficulty is not brewing but logistics: every ingredient crosses a border, and so does every bottle sold.
How long it takes: three to four weeks from mash to bottle
How it is eaten
Cold, at the Taybeh Oktoberfest, or in Ramallah and Bethlehem restaurants.
