Kosovo Charcuterie & cured

RATE

A dry spiced beef sausage of Ottoman origin, air-dried and sliced thin. It is also spelled sujuk across the region, and it is the same tradition as Bulgarian sudzhuk and Turkish sucuk.

It is a fermented raw-meat cure that depends on hitting a pH and water-activity target in the first days, measured rather than judged, and on a cold airy room held steady for weeks.

What goes into it

  • beef
  • beef fat
  • salt and curing salt
  • cumin, garlic, paprika and black pepper
  • beef casing

How it is made

Minced beef and fat are mixed with salt and spices, rested overnight, stuffed into casings and hung in cold air. The sausage ferments in the first days, which drops its pH, then dries over three to six weeks while it is pressed flat between boards. The acidification is the safety step and the drying is the preservation.

How long it takes: three to six weeks

How it is eaten

Sliced thin with bread and cheese, or fried with eggs.
