What goes into it

  • sugarcane from the estate
  • yeast
  • American oak and sherry casks

How it is made

Cane grown and milled on the family estate is fermented and distilled in column stills, then aged in oak in the tropical heat of the Panamanian interior — where evaporation runs several times faster than in a temperate warehouse, so a few years does the work of a decade. The older expressions are finished in sherry, port or cognac casks.

How long it takes: seven to twenty-five years in tropical oak

How it is eaten

Neat in a tumbler after dinner, or over a single large cube.
