Two unrelated groups — hard-shelled molluscs and jointed crustaceans — that share a kitchen category, a very short cooking time and a serious allergy risk.
Where it comes from
Shell middens on coastlines everywhere show shellfish being eaten as far back as the record goes; they are gatherable without tools or boats, which made them among the first reliable animal foods.
Bivalves — mussels, oysters, clams — are filter feeders, and what they filter is the water they sit in. That is why they are farmed on classified beds and why provenance matters more with them than with almost any other food.
Varieties
- Bivalves — Mussels, clams, oysters, scallops, cockles. Steamed open, eaten raw, or seared in the case of scallops.
- Crustaceans — Prawns, shrimp, crab, lobster, langoustine, crayfish. Sweet, firm, and tough within a minute of being done.
- Cephalopods — Squid, octopus, cuttlefish. Two ways only — a couple of minutes, or well over an hour. The middle is rubber.
- Gastropods — Whelks, winkles, abalone, snails. Firm to chewy, usually long-cooked or tenderised.
- Dried shrimp and shrimp paste — Concentrated umami used as a seasoning across Southeast Asia, West Africa and Latin America.
In the kitchen
A live bivalve closes when tapped. One that stays open before cooking is dead and is discarded; one that stays shut after cooking has simply not opened and is also discarded.
Prawns curl into a loose C when done and a tight O when overdone. That is a more reliable gauge than colour.
Octopus is the clearest case of the two-speed rule: flash-grilled after being tenderised, or simmered gently for an hour and a half. Nothing useful happens in between.
Choosing and keeping
Shellfish allergy is one of the most serious and most persistent food allergies, and crustacean and mollusc allergies are separate. Cross-contamination in a fryer or on a board is enough to matter.
