The organs and extremities, which spoil fastest, taste strongest and cost least — and which most of the world’s traditional cooking treats as the good part rather than the leftovers.
Where it comes from
Every long-standing meat tradition uses offal, because an animal was an expensive event and nothing was thrown away. Its retreat in some Western markets over the last century is recent and is about squeamishness and distribution, not about the food.
Organs also spoil within a day or two of slaughter, which is why offal dishes cluster around markets and slaughterhouses and why so many of them are cooked hard and fast or preserved immediately.
Varieties
- Liver — The most-eaten organ. Calf and lamb are mild, ox is strong, chicken livers are soft and mild enough for a smooth parfait.
- Kidney — Firm, distinctly mineral. Soaked and trimmed of core before cooking. Steak and kidney, rognons, kidneys on toast.
- Heart — Pure working muscle, lean and firm — closer to steak than to organ. Grilled rare or braised long.
- Tripe — Stomach lining. Long cooking turns it silky. Menudo, trippa, sopa de mondongo, and dozens more.
- Sweetbreads — Thymus and pancreas. Delicate, creamy, poached then crisped.
- Tongue — Slow simmered, peeled, pressed. Dense, mild and closer to a good brisket than to anything strange.
- Blood — Sausages and puddings across Europe, Asia and Latin America. Sets like an egg.
In the kitchen
Liver goes from tender to grey and grainy in under a minute. Hard heat, brief, pink inside.
Most of the strong flavours in kidney and liver are water-soluble; a soak in milk or salted water tempers them without cooking anything out.
Tripe and tongue are tough because of connective tissue, not toughness of muscle, and they want the same hours-long treatment as shin or oxtail.
Choosing and keeping
Buy it fresh and cook it the same day. Offal declines faster than any other part of the animal, and a liver that smells of anything but iron is past it.
