The map
Country outlines come from Natural Earth, which places its data in the public domain. The atlas uses the 1:110,000,000 scale; at that scale twenty-eight island microstates have no polygon at all, so they do not appear on the map and are reachable by search instead.
Flag artwork on the map comes from the flag-icons project by Panayiotis Lipiridis, used under the MIT licence and reproduced below in full, as that licence requires.

The illustrations
The dish art and Chef Baku are generated for this atlas with an image model, and are not photographs. That is a deliberate choice rather than a stand-in for pictures we could not get — see About.
The site itself
The atlas is generated from a single dataset into this WordPress site by a set of build scripts written for the project. The theme and the recipe plugin were both written for this site.
